Description:
In food applications, D-allulose is considered an ideal sucrose substitute due to its advantages such as high sweetness, good solubility, low calorie content and low glycemic response. When added to food, D-allulose not only improves the gel strength of the product, but also reacts with food proteins via the Maillard reaction to enhance flavor. Compared with D-fructose and D-glucose, D-allulose produces more antioxidant Maillard reaction products, enabling food to maintain its antioxidant activity for a longer period. In 2011, D-allulose obtained safety certification from the FDA and is approved for use as an additive in food and dietary applications.
Allulose is a zero-fat sugar that helps mitigate postprandial blood glucose spikes. It is approximately 70% as sweet as sucrose and exhibits high solubility, making it particularly suitable for food processing.
