melting point:127°C White to slightly yellow needle-like crystals or crystalline powder with a strong vanilla bean aroma. Melting point: 77~78℃, boiling point: 285℃, 149~150℃ (1.73kPa). Soluble in ethanol, ether, glycerol, propylene glycol, chloroform and alkaline solutions; slightly soluble in water (1.3% at 50℃), and the aqueous solution is acidic. The oral LD50 in rats is 1.59~2.0g/kg, MNL is 1000mg/kg, and Adl is 0~3mg/kg (FAO/WHO, 1994).

 Usage

Ethyl vanillin is a food flavoring allowed by China's "Hygienic Standards for the Use of Food Additives". Its aroma intensity is 3 to 4 times that of vanillin. It is mainly used in the preparation of vanilla-type food flavors, soft drinks, ice cream, chocolate, tobacco, alcohol, etc. The usage amount in chocolate is 250mg Chemicalbook/kg; in chewing gum, it is 110mg/kg; in alcoholic beverages, 100mg/kg; in puddings, 74mg/kg; in candies, 65mg/kg; in baked goods, 63mg/kg; in cold drinks, 47mg/kg; and in soft drinks, 20mg/kg.

GB2760—96 stipulates that it is a food flavoring temporarily allowed for use. It is mainly used in the preparation of flavors for vanilla, chocolate, soda, ice cream, etc. According to the regulations of FAO/WHO (1983): It can be used in baby canned foods and processed cereal products for infants and young children, with the maximum allowable dosage being 70mg/kg (referring to grain foods); for cocoa powder, sugar-containing cocoa powder, chocolate, cocoa liquor, cocoa cakes, cocoa-coated products (used in small amounts for flavoring) and cream, the dosage is limited to processing needs (GMP).
